Apple cider-infused cookies with warm spices, perfect for snacking at games. Quick and easy with Betty’s sugar cookie mix and apple cider mix. Yields 40 cookies for sharing. Ready in just 20 minutes.
Ingredients:
  • 2 tablespoons sugar
  • 1 package (0.74 oz) apple cider instant drink mix (do not prepare)
  • 1 1/2 teaspoons ground cinnamon
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter, softened
  • 3/4 cup finely chopped peeled apple (1 medium)
Instructions:
  • Preheat the oven to 375°F. Combine sugar, 1 teaspoon of apple cider drink mix, and 1/2 teaspoon of cinnamon in a small bowl; set aside.
  • Combine cookie mix, softened butter, egg, remaining apple cider drink mix, and cinnamon in a large bowl, stirring until a soft dough forms. Mix in apple pieces until combined. Shape the dough into 40 (1 1/4-inch) balls, then roll them in a sugar-spice mixture. Place the balls 2 inches apart on ungreased cookie sheets, discarding the sugar-spice mixture after rolling.
  • Bake for 7 to 9 minutes until edges are set and lightly golden. Let cool for 1 minute on the sheet and then transfer to a cooling rack. Allow to cool completely for about 20 minutes. Store in an airtight container once completely cooled.
