Apple spice caramel cookies: Tart apple cider cookies filled with gooey caramel, a taste of fall in every bite.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 1 cup softened butter
  • 1 (7.4 ounce) box apple cider drink mix (such as Alpine® Spiced Apple Cider)
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 (14 ounce) package caramel bits (such as Kraft®)
Instructions:
  • Combine flour, baking soda, cinnamon, and baking powder, whisking until well blended.
  • In a separate bowl, whisk together butter, apple cider drink mix, sugar, and salt until light and fluffy using an electric mixer. Add eggs one at a time, followed by vanilla extract. Gradually mix in the flour mixture until just combined. Refrigerate dough for 1 hour before using.
  • Preheat the oven to a perfect 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper.
  • Soften caramels in a microwave-safe bowl for about 20 seconds. Then, flatten them using the bottom of a glass.
  • Using a tablespoon, shape cookie dough into balls. Gently press down on each ball. Place a caramel between two pieces of dough and seal the edges. Repeat with the rest of the dough and caramels. Place cookies two inches apart on prepared baking sheets.
  • Bake in the preheated oven for 12 to 14 minutes until lightly browned. Slide parchment paper with cookies onto the counter to cool.
