Caramel Apple Cupcakes

Fall-inspired apple spice cupcakes made with Betty Crocker™ cake mix and applesauce.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Butter Recipe Yellow Cake Mix
  • Water, butter and eggs called for on cake mix box
  • 1 cup chunky applesauce
  • 1 tablespoon apple pie spice
  • 25 caramels, unwrapped
  • 2 tablespoons half-and-half
  • 1/2 cup finely chopped peanuts
  • 18 craft or paper lollipop sticks, if desired (for decoration)
Instructions:
  • Preheat oven to 325°F. Line 18 regular-size muffin cups with paper baking cups. Prepare cake batter according to package instructions; then, delicately fold in applesauce and apple pie spice. Distribute the batter evenly into the muffin cups.
  • Bake for 17 to 22 minutes, or until a toothpick inserted near the center comes out clean. Allow the pan to cool for 10 minutes, then transfer the cakes to a cooling rack. Let them cool completely for about 30 minutes.
  • In a small microwave-safe bowl, heat caramels and half-and-half on High for 2 to 3 minutes, stirring every 30 seconds, until smooth. Allow to cool for about 10 minutes to slightly thicken. Dip the tops of cupcakes into the caramel mixture and sprinkle with peanuts.
