Caramel Apple-Spice Cupcakes

Indulge in a scrumptious treat of apple-cinnamon cupcakes with rich caramel, made easy with Betty Crocker™ Super Moist™ spice cake mix.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Spice Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 cup chopped peeled apple (1 medium)
  • 12 oz cream cheese, softened
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 1/2 cup caramel topping
  • 24 cinnamon sticks (3 inch)
  • Ground cinnamon
Instructions:
  • Preheat your oven to 350°F and line 24 regular-size muffin cups with paper baking cups.
  • Prepare the cake mix as instructed on the box by combining water, oil, and eggs. Gently fold in chopped apple. Fill muffin cups evenly with the batter.
  • Bake for 18 to 20 minutes until a toothpick inserted in the center comes out clean. Let cool for 10 minutes, then transfer from pans to cooling racks and allow to cool completely.
  • Blend cream cheese and butter together until smooth in a large bowl using an electric mixer. Add powdered sugar and mix until creamy. Transfer the frosting into a decorating bag with a star tip and pipe onto cupcakes. Drizzle with caramel topping and garnish each cupcake with a cinnamon stick. Finish by sprinkling ground cinnamon on top. Store covered in the fridge.
