Apple cider muffins with spiced oat-pecan topping.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.75 cup apple cider
  • 0.25 cup vegetable oil
  • 1 egg
  • 1 cup apples- peeled, cored, and finely diced
  • 0.33333334326744 cup packed brown sugar
  • 0.33333334326744 cup rolled oats
  • 0.33333334326744 cup chopped pecans
  • 0.25 cup all-purpose flour
  • 3 tablespoons butter, melted
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prep a 12-cup muffin tin by greasing the bottoms or lining with paper liners.
  • In a medium bowl, whisk together flour, white sugar, baking powder, cinnamon, nutmeg, and salt until fully combined.
  • In a separate bowl, mix together apple cider, vegetable oil, and egg until well combined. Add the flour mixture all at once and gently stir until just moistened; the batter should be lumpy. Fold in the apples gently.
  • In a medium bowl, mix brown sugar, oats, pecans, and flour for the topping until well combined. Stir in melted butter until ingredients are moistened and form clumps.
  • Fill the prepared muffin cups with batter, leaving a little space at the top. Sprinkle a generous amount of streusel topping on each muffin.
  • Bake in the preheated oven for 18 to 22 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool for 1 minute before removing from the pan. Serve while warm.
