Apple cider and rosemary-infused sauce makes this chicken dish irresistibly delicious.
Ingredients:
  • 4 boneless, skinless chicken breasts
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 cup all-purpose flour
  • 3 slices bacon, chopped
  • 1 tablespoon butter
  • 1 firm apple, cored and cut into 1/2-inch slices
  • 0.5 onion, vertically sliced
  • 2 cloves garlic, thinly sliced
  • 0.5 cup sodium-free chicken broth
  • 0.5 cup apple cider
  • 2 tablespoons minced fresh rosemary
  • 2 tablespoons lemon juice
Instructions:
  • Flatten chicken breasts to an even thickness using a tenderizer and season generously with salt and pepper. Place chicken breasts in a large resealable plastic bag with flour, shake to coat evenly. Shake off excess flour and set aside.
  • In a large skillet over medium-high heat, crisp the bacon by turning occasionally for about 10 minutes. Drain the bacon on paper towels, leaving about 1 tablespoon of bacon fat in the skillet.
  • Combine butter with the reserved bacon fat and melt over medium heat. Cook chicken until no longer pink inside and a meat thermometer reads 165 degrees, about 3 to 4 minutes per side, adjusting for thickness. Transfer chicken from skillet and keep it warm.
  • Start by adding a delightful combination of apple, onion, and garlic to the skillet. Sauté for 3 to 4 minutes, stirring occasionally. Next, introduce a mix of chicken broth, apple cider, fragrant rosemary, and zesty lemon juice to the skillet. Cover and simmer until the apple and onion reach a tender perfection, approximately 4 minutes. Gently transfer the apple and onion to a plate to keep warm, while retaining the flavorful pan juices in the skillet.
  • Bring the pan juices to a boil, simmer for 3 minutes until slightly reduced and more flavorful. Add the chicken, apple, and onion back to the skillet, reheating everything until warm. Serve topped with the savory pan sauce and crispy bacon for an extra delicious touch.
