Quick and decadent caramel-topped artisan apple pie.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/3 cup cold shortening
  • 1 tablespoon cold butter
  • 1 teaspoon vegetable oil
  • 3-4 tablespoons buttermilk
  • 1/2 cup sugar
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 4 cups chopped peeled apples (4 medium)
  • 1/2 teaspoon ground cinnamon
  • 1 cup caramel topping
Instructions:
  • Preheat the oven to 400°F. Combine 1 cup of flour and salt in a medium bowl. Use a pastry blender to cut in shortening and butter until the mixture resembles small peas. Gradually add oil and buttermilk, one tablespoon at a time, tossing with a fork until the dough is moistened and almost cleans the sides of the bowl.
  • Form the dough into a ball and then flatten it into a 5-inch round on a lightly floured large ungreased cookie sheet. Roll out the pastry with a floured rolling pin until it forms a 12-inch round.
  • Combine 1/2 cup sugar and 3 tablespoons flour in a large bowl. Add apples and coat them well. Place the apple mixture in the center of the dough round, leaving a 2-inch border. Fold the edges of the dough over the apples and crimp lightly. In a small bowl, mix 1 tablespoon sugar and cinnamon, then sprinkle over the apples and dough.
  • Bake for 42-47 minutes until the crust is golden brown and the apples are fork-tender. If the apples start to brown too quickly, lightly cover them with aluminum foil. Serve warm, sliced into wedges, and drizzle with caramel topping.
