Indulge in a delightful fall fruit crostata - a simple, rustic dessert bursting with seasonal flavors. No dough rolling or fuss needed - perfect for your autumn cravings!
Ingredients:
  • For the dough
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon fine sea salt
  • 1/2 cup (1 stick) very cold unsalted butter, cut into 1/2-inch cubes
  • 3-5 tablespoons ice water, plus more as needed
  • For the filling
  • 1/2 cup Ocean Spray® Craisins® Dried Cranberries
  • 1/4 cup Ocean Spray® Cranberry Juice Cocktail
  • 3 large baking apples, such as Honeycrisp, Macoun, or Empire
  • 1/4 cup all-purpose flour
  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • For the egg wash
  • 1 egg, well beaten with 1 tablespoon water
Instructions:
  • Prepare the dough: Blend the flour, sugar, salt, and butter in a food processor until the butter forms small, pea-sized pieces. Pour in 3 tablespoons of ice water, blend until the mixture is even. Test the dough by pressing a small amount in your hand - it should hold together firmly. If it's dry or crumbly, add more ice water, 1 tablespoon at a time until it holds together well.
  • Chill the dough: Shape the dough into a flat disk on the countertop, wrap it in plastic wrap, and refrigerate for at least 30 minutes or up to 2 days.
  • Place the cranberries and cranberry juice in a microwave-safe bowl and heat for 30 to 45 seconds until warmed. Allow the cranberries to soak for 15 minutes as you work on the filling. Reserve 1 tablespoon of cranberries for garnishing, and set aside after draining.
  • Prepare the apples: Peel, core, and quarter them. Cut each quarter into 4-5 wedges and place in a large mixing bowl with cranberries. In a small bowl, whisk together flour, brown sugar, cinnamon, and salt. Gently mix the sugar mixture into the apples and set aside.
  • Preheat the oven to 400°F and prepare a rimmed baking sheet by lining it with parchment paper.
  • Roll the dough on a floured surface into a 13-inch circle, then transfer it onto the baking sheet.
  • Create a beautiful crostata by placing the flavorful filling in the middle of the dough, leaving a generous 3-inch border. Fold the dough over the filling, pleating and sealing the edges meticulously. Finish by giving the dough a glossy finish with a brush of egg wash.
  • Bake the crostata in the oven for 40 to 45 minutes until the apples are tender, the filling bubbles, and the crust is golden brown. Sprinkle with reserved cranberries after removing from the oven, then allow it to cool on a wire rack for at least 20 minutes before slicing and serving.
