Try this healthier, fiber-rich apple crumble that's diabetic-friendly and lighter on sugar.
Ingredients:
4 large Granny Smith apples, peeled, cored, sliced
2.50 gm mixed spice
100g (1 cup) rolled oats
45g (1/2 cup) processed oat bran (Willow Valley brand)
50g (1/3 cup) wholemeal plain flour
32.00 gm brown sugar
2.50 gm ground cinnamon
60mls (1/4 cup) macadamia nut oil
40.00 ml sliveredalmonds
Instructions:
Preheat your oven to 180°C.
Mix the apples with the spices and transfer to a 20cm round ovenproof dish. Cover with foil and bake in a preheated oven for 15-20 minutes.
Combine rolled oats, oat bran, flour, brown sugar, cinnamon, and macadamia nut oil in a food processor. Pulse until mixture is crumbly, then mix in the almonds.
Spread the mixture over the apples, pressing gently with the back of a metal spoon. Bake for an additional 30 minutes, or until the apples are tender.
