Try this healthier, fiber-rich apple crumble that's diabetic-friendly and lighter on sugar.
Ingredients:
  • 4 large Granny Smith apples, peeled, cored, sliced
  • 2.50 gm mixed spice
  • 100g (1 cup) rolled oats
  • 45g (1/2 cup) processed oat bran (Willow Valley brand)
  • 50g (1/3 cup) wholemeal plain flour
  • 32.00 gm brown sugar
  • 2.50 gm ground cinnamon
  • 60mls (1/4 cup) macadamia nut oil
  • 40.00 ml slivered almonds
Instructions:
  • Preheat your oven to 180°C.
  • Mix the apples with the spices and transfer to a 20cm round ovenproof dish. Cover with foil and bake in a preheated oven for 15-20 minutes.
  • Combine rolled oats, oat bran, flour, brown sugar, cinnamon, and macadamia nut oil in a food processor. Pulse until mixture is crumbly, then mix in the almonds.
  • Spread the mixture over the apples, pressing gently with the back of a metal spoon. Bake for an additional 30 minutes, or until the apples are tender.
