Decadent mascarpone cheesecake meets sweet apple pie in a divine dessert fusion.
Ingredients:
  • 0.66666668653488 (16 ounce) package graham crackers, crushed into fine crumbs
  • 1.25 sticks butter, melted
  • 2 large apples - peeled, cored, and sliced
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon nutmeg
  • 2.5 (8 ounce) packages cream cheese
  • 1 (8 ounce) container mascarpone cheese
  • 0.66666668653488 cup white sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then prepare a 9-inch springform pan by lining it with parchment paper or greasing it with butter.
  • In a large bowl, mix graham cracker crumbs and butter until you achieve a grainy mixture. Set aside 1/4 cup and evenly press the remaining crust onto the base of the prepared springform pan.
  • In a bowl, mix apple slices with brown sugar, cinnamon, and nutmeg until evenly coated. Set aside.
  • In a large bowl, blend cream cheese, mascarpone cheese, sugar, and vanilla extract with an electric mixer until smooth. Add eggs one at a time and beat for 2 to 3 minutes until well combined. Pour the filling into the crust-lined pan and spread evenly with a spatula.
  • Layer apple slices in a "deck of cards" arrangement on top of the filling. Sprinkle the reserved crust mixture on top.
  • Simply bake in the oven at the specified temperature until the edges are firm, the apples are soft, and the center is slightly jiggly, for around 30 to 40 minutes.
  • Chill for 6 to 8 hours before serving.
