Tangy rhubarb and sweet apples combined with a crumbly brown sugar, butter, and oat topping for a perfect apple-rhubarb crisp.
Ingredients:
  • 6 large apples, cored and diced
  • 1 cup diced rhubarb
  • 0.25 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1.75 cups quick cooking oats
  • 1 cup brown sugar
  • 1 cup chilled butter, cut into pieces
  • 2 tablespoons white sugar, or to taste
Instructions:
  • Gather all the ingredients needed. Preheat the oven to 350 degrees F (175 degrees C) and generously butter a 9x13-inch baking dish.
  • Combine apples, rhubarb, a cup of white sugar, a quarter cup of flour, and a teaspoon of cinnamon in a bowl until well mixed. Spread the fruit mixture evenly in the baking dish.
  • Combine oats, the rest of the 1 ½ cups flour, and brown sugar together in a separate bowl. Work in butter until the mixture is crumbly. Spread the mixture evenly over the fruit mixture.
  • Combine 2 tablespoons of white sugar with the remaining 1/2 teaspoon of cinnamon in a small bowl, then sprinkle over the oat topping.
  • Bake the dish in the preheated oven until the fruit is bubbling and thick and the topping is golden brown, approximately 45 minutes. Allow it to cool for 10 to 15 minutes before serving.
