A delightful twist on classic apple crisp, this rhubarb crisp shines with tangy sweetness, no strawberries needed. Topped with buttery oatmeal streusel, it’s pure, delicious perfection.
Ingredients:
  • 6 cups fresh or frozen (thawed and drained) rhubarb, chopped
  • 3/4 cup packed brown sugar
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 cup quick-cooking or old-fashioned oats
  • 1/3 cup butter, softened
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • Cream or Ice cream, if desired
Instructions:
  • Preheat oven to 375°F and generously grease an 8-inch square pan with shortening.
  • Spread the rhubarbs evenly in the pan. In a medium bowl, thoroughly mix all the remaining ingredients except the cream together, then sprinkle this mixture over the rhubarbs.
  • Bake for around 30 minutes or until the topping is golden brown and the rhubarb is fork-tender. Enjoy warm with cream.
