Ginger Rhubarb Crisp

Rhubarb and oat crisp with zesty orange and ginger twist.
Ingredients:
  • 1 cup white sugar
  • 0.5 teaspoon salt
  • zest from 1 orange
  • 2 tablespoons grated fresh ginger root
  • 8 cups chopped rhubarb
  • 2 cups brown sugar
  • 0.5 cup salted butter
  • 2 teaspoons cinnamon
  • 2 cups rolled oats
Instructions:
  • Position the oven rack in the center and preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine the white sugar, 3 tablespoons of flour, salt, eggs, orange zest, and ginger in a bowl and mix well. Fold in the rhubarb mixture and transfer it to the prepared baking dish.
  • In a food processor or blender, pulse together 1/2 cup flour, brown sugar, butter, and cinnamon until well combined. Add oatmeal and mix. Crumble the oatmeal mixture over the rhubarb and gently pat it down to create a crust.
  • Bake in the center of a hot oven until the topping is lightly golden, the rhubarb has softened, and the juices are thick and bubbling, for 40 to 50 minutes. Check periodically from 30 minutes onward to monitor the thickness of the bubbles.
