Rhubarb & ginger relish

Tangy rhubarb relish enhances the flavor of meats and poultry.
Ingredients:
  • 500g rhubarb, trimmed, washed, dried, coarsely chopped
  • 1 brown onion, halved, finely chopped 250ml (1 cup) cider vinegar
  • 500g (2 1/2 cups, firmly packed) brown sugar
  • 2.50 gm ground ginger
  • 1.25 gm ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cloves
  • Salt & freshly ground black pepper
Instructions:
  • In a large saucepan over medium heat, combine rhubarb, onion, vinegar, sugar, ginger, cinnamon, allspice, and cloves. Stir occasionally and cook for 30 minutes until the relish thickens. Season with salt and pepper to taste.
  • Let it cool off the heat for 1 hour before serving in a small bowl.
