Elevate cheeseboards with quick and vibrant homemade rhubarb relish in under 30 minutes with simple ingredients.
Ingredients:
  • 1 red onion, thinly sliced
  • 42.50 gm sultanas
  • 1 tsp grated ginger
  • 1 orange, rind grated
  • 125ml (1/2 cup) white wine
  • 60ml (1/4 cup) white wine vinegar
  • 200g (1 cup) firmly packed brown sugar
  • 1 bunch rhubarb, washed, trimmed, stems cut into 2cm pieces
Instructions:
  • In a saucepan over low heat, mix onion, sultanas, ginger, rind, wine, vinegar, and sugar until sugar dissolves. Add rhubarb stems and simmer for 5 minutes. Remove rhubarb and strain, keeping the syrup. Reduce the syrup by half in the same pan. Pour syrup over rhubarb and let it cool. Serve with ripe soft cheese wedges.
