Blueberry-Rhubarb Crisp

Add deliciously crunchy Honey Nut Clusters® cereal to elevate your fruit dessert.
Ingredients:
  • 2 cups Honey Nut Clusters® cereal
  • 3/4 cup packed brown sugar
  • 1/3 cup Gold Medal™ whole wheat flour
  • 1 teaspoon grated lemon peel
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 cups chopped fresh rhubarb
  • 1 cup fresh blueberries
  • 1/4 cup chopped pecans
Instructions:
  • Preheat oven to 375°F. Grease an 8-inch square (2-quart) glass baking dish with cooking spray. In a resealable plastic bag, crush cereal slightly using a rolling pin or meat mallet.
  • Combine brown sugar, flour, lemon peel, cinnamon, and nutmeg in a large bowl. Add rhubarb and blueberries, then transfer mixture to a baking dish. Top with crushed cereal and pecans for a crunchy finish.
  • Bake for 30 to 40 minutes until the rhubarb can be easily pierced with a fork. Allow it to sit for 30 minutes before serving.
