Easy apple and rhubarb crisp made with sliced rhubarb for convenience!
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.25 cups rolled oats
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cup melted butter
  • 2 cups chopped rhubarb
  • 2 cups chopped apples
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup white sugar
  • 1 cup water
Instructions:
  • Preheat the oven to 325°F (165°C).
  • Combine flour, oats, brown sugar, and cinnamon in a bowl. Mix in melted butter until a crumbly texture forms. Press half of the mixture into a 9x13-inch baking dish.
  • Combine rhubarb and apples in a bowl, then pour over the oat mixture in the baking dish.
  • Combine cornstarch and water in a bowl, stirring until smooth and well combined.
  • In a saucepan over medium-high heat, combine sugar, 1 cup water, and vanilla extract; bring to a boil while stirring constantly. Add cornstarch mixture to the sugar mixture and continue boiling, stirring constantly, until thickened, approximately 1 to 2 minutes. Pour the thickened sugar mixture over the rhubarb and apples, then sprinkle the remaining oat mixture on top.
  • Bake in the preheated oven for 35 minutes until golden and bubbly.
