Classic rhubarb and apple crumble

Irresistible apple rhubarb dessert that's timeless.
Ingredients:
  • 750g apple
  • 70.95 gm caster sugar
  • 1.25 gm ground cinnamon
  • 1 tsp finely grated lemon rind
  • 6 rhubarb stems, trimmed, cut into 3cm pieces
  • 2 tsp plain flour
  • 100.00 gm rolled oats
  • 125.00 ml plain flour, extra
  • 90.00 gm firmly packed brown sugar
  • 80g butter, chilled, chopped
  • 62.50 ml flaked almonds
  • Icing sugar, to serve (see notes)
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • In a large saucepan over medium heat, combine apple, caster sugar, cinnamon, lemon rind, and 2 tablespoons of water. Cover and cook for 5 minutes until the apple starts to soften. Then add rhubarb and flour, cover, and cook for an additional 3 minutes until the rhubarb just softens.
  • Pour the mixture into an 8-cup baking dish.
  • In a bowl, mix together oats, additional flour, and brown sugar. Use your fingertips to blend the butter into the mixture until it forms coarse crumbs. Add in the almonds. Sprinkle this over the rhubarb mixture and bake until golden, about 35 minutes. Let it cool for 5 minutes, then dust with icing sugar before serving.
