Classic rhubarb cobbler, just like grandma's, simple and delicious.
Ingredients:
  • 3 cups chopped rhubarb, or to taste
  • 0.75 cup white sugar
  • 3 tablespoons butter
  • 1 cup all-purpose flour
  • 0.5 cup milk
  • 0.25 teaspoon salt
  • 1 cup boiling water
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Evenly arrange the rhubarb in a 9x13-inch baking dish.
  • Using an electric mixer, whip together 3/4 cup white sugar and butter until creamy. Add 1 cup flour, milk, baking powder, vanilla extract, and 1/2 teaspoon salt; mix well. Pour the batter over the rhubarb.
  • Combine 1 cup of sugar, cornstarch, and 1/4 teaspoon of salt in a bowl. Sprinkle the mixture over the batter, then pour boiling water over the top.
  • Bake in the oven until the cobbler is lightly browned, approximately 1 hour.
