Indulge in a decadent rhubarb cake with a cinnamon butter topping, perfect with a scoop of ice cream for a delightful spring dessert.
Ingredients:
  • 1.5 cups white sugar
  • 0.5 cup butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup buttermilk
  • 2 cups rhubarb, chopped
  • 1 cup packed brown sugar
  • 0.25 cup butter
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a big bowl, use an electric mixer to cream together butter and sugar until pale and fluffy. Add egg and vanilla, and mix well.
  • In a separate bowl, gently sift together 2 cups of flour, baking soda, and salt. Alternate adding this mixture with buttermilk to the butter mixture.
  • Coat rhubarb in 1 tablespoon of flour, then fold it into the batter. Transfer the batter into a buttered 9 x 13-inch pan, smoothing the top.
  • Combine brown sugar, 1/4 cup butter, and cinnamon until well mixed, then generously sprinkle over the batter.
  • Bake until a toothpick inserted in the cake comes out clean and the top turns golden, approximately 45 minutes in a preheated oven.
