Easy Apple Rhubarb Jam

Try this delicious apple-rhubarb jam, or swap in strawberries for a tasty strawberry-rhubarb version!
Ingredients:
  • 3 cups diced rhubarb
  • 3 cups diced peeled apples
  • 0.5 cup water
  • 1 tablespoon ground cinnamon
  • 1 (2 ounce) package dry pectin
Instructions:
  • Combine rhubarb, apples, sugar, water, and cinnamon in a large saucepan. Bring to a boil and simmer for 20 minutes until fruit is tender. Add pectin and boil for an additional 5 minutes.
  • Transfer the mixture into sterilized jars. Clean the rims with a cloth or paper towel and tightly seal with new lids. Place the jars in a simmering water bath for a minimum of 10 minutes, or follow the guidelines for high altitude cooking from your local extension. Keep unopened jars in a cool, dark spot, and refrigerate the jam once opened.
