Apple turnovers

Caramelized apples in flaky puff pastry.
Ingredients:
  • 30g butter
  • 5 Fuji apples, peeled, cored, cut into 1cm pieces
  • 55g (1/4 cup, firmly packed) brown sugar
  • 80ml (1/3 cup) water
  • 90g (1/2 cup) sultanas
  • 2.50 gm cornflour
  • 20.00 gm water
  • 2 sheets (25 x 25cm) frozen puff pastry, just thawed
  • 300ml thickened cream
  • Icing sugar, to dust
Instructions:
  • In a saucepan over medium heat, melt butter. Add apple and sugar, then coat by tossing. Stir in water, sultanas, and cinnamon. Cover, bring to a simmer, and cook for 5 minutes until apple is tender. In a bowl, combine cornflour and water. Stir into apple mixture and cook for 1 minute until thickened.
  • 1. Preheat your oven to 220°C and line 2 baking trays with non-stick baking paper. 2. Cut three 15cm pastry discs, then halve them. 3. Place the pastry on the trays and press the edges with a fork. 4. Brush with egg and bake for 10 minutes, turning once, until golden. 5. Allow to cool slightly before enjoying.
  • Whisk the cream until stiff peaks are achieved.
  • Slice the pastries in half horizontally without cutting through completely. Generously spread cream over the bottom halves. Spoon the apple mixture on top. Finish with a sprinkle of icing sugar.
