Apple turnovers

Caramelized apples in flaky puff pastry.
Ingredients:
30g butter
5Fuji apples, peeled, cored, cut into 1cm pieces
55g (1/4 cup, firmly packed) brown sugar
80ml (1/3 cup) water
90g (1/2 cup) sultanas
2.50 gm cornflour
20.00 gm water
2sheets (25 x 25cm) frozen puff pastry, just thawed
300ml thickened cream
Icing sugar, to dust
Instructions:
In a saucepan over medium heat, melt butter. Add apple and sugar, then coat by tossing. Stir in water, sultanas, and cinnamon. Cover, bring to a simmer, and cook for 5 minutes until apple is tender. In a bowl, combine cornflour and water. Stir into apple mixture and cook for 1 minute until thickened.
1. Preheat your oven to 220°C and line 2 baking trays with non-stick baking paper.
2. Cut three 15cm pastry discs, then halve them.
3. Place the pastry on the trays and press the edges with a fork.
4. Brush with egg and bake for 10 minutes, turning once, until golden.
5. Allow to cool slightly before enjoying.
Whisk the cream until stiff peaks are achieved.
Slice the pastries in half horizontally without cutting through completely. Generously spread cream over the bottom halves. Spoon the apple mixture on top. Finish with a sprinkle of icing sugar.
