Apple-Berry Pie

Delicious apple and blackberry pie.
Ingredients:
  • 1 pastry for a 9 inch double crust pie
  • 1 cup white sugar
  • 4 teaspoons tapioca
  • 0.5 teaspoon ground cinnamon
  • 2 cups fresh blackberries
  • 2 cups apples - peeled, cored and sliced
  • 2 tablespoons butter, cut into small pieces
Instructions:
  • Preheat oven to 375°F (190°C). Roll out one crust on a lightly floured surface and place it in a 9-inch pie plate. Roll out the top crust and keep it aside.
  • Combine the sugar, tapioca, and cinnamon in a large bowl. Add the blackberries and apple slices, gently toss to coat without crushing the berries. Allow to stand for 20 minutes.
  • Spread the filling into the pastry lined pan. Dot with butter, moisten the edge of the pastry with water, cover with the top crust, then trim and crimp the edges. Make a few slits in the top crust for steam to escape during baking and cover the edge with foil to avoid over-browning.
  • Bake in a preheated oven for 25 minutes. Remove foil and bake for an additional 20 to 25 minutes until the crust is golden brown. Allow to cool on a wire rack.
