Indulge in a nostalgic apple-blueberry cobbler with cider crumb topping, baked in a rustic cast iron skillet.
Ingredients:
  • 1 lemon, juiced
  • 4 Gala apples - peeled, cored, and cut into 1/16-inch slices
  • 2 cups frozen wild blueberries
  • 0.33333334326744 cup maple syrup
  • 1 tablespoon cornstarch
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup maple syrup
  • 0.25 cup unsalted butter, melted
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup hard apple cider
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 10-inch cast iron skillet.
  • Combine apples, blueberries, maple syrup, cornstarch, lemon juice, cinnamon, kosher salt, and nutmeg in a large bowl. Mix well and transfer to the prepared skillet.
  • Combine maple syrup, melted butter, and vanilla extract in a large bowl. Mix in flour, baking powder, baking soda, and kosher salt until crumbly. Stir in cider until just combined. Spoon batter over apple-berry mixture.
  • Place the dish in the oven and bake until the biscuit topping is golden and cooked through and the fruit filling is hot and bubbly, for approximately 45 minutes.
