Apple and ginger scones, warm and drizzled with a citrusy glaze.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/3 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons butter, cut into pieces
  • 1/2 cup finely chopped, peeled apple
  • 1/4 cup finely chopped crystallized ginger
  • 1 egg
  • 1/2 cup whipping cream
  • 1/2 teaspoon grated lemon peel
  • 3/4 cup powdered sugar
  • 2 tablespoons fresh lemon juice
Instructions:
  • Preheat your oven to 400°F and spray a cookie sheet with nonstick cooking spray. In a medium bowl, mix together flour, sugar, baking powder, and salt. Use a pastry blender or fork to cut in the butter until the mixture resembles coarse crumbs, then stir in the apple and ginger.
  • In a small bowl, whisk the egg until fluffy. Mix in the cream and grated lemon peel. Combine with the dry ingredients, stirring only until just mixed.
  • Gently knead the dough on a floured surface 5 or 6 times. Transfer the dough to a sprayed cookie sheet and shape it into an 8-inch round, about 1 inch thick. Cut the dough into 8 wedges and slightly separate them.
  • Bake at 400°F. for 15-20 minutes, or until beautifully golden and firm in the center.
  • Combine powdered sugar and lemon juice in a small bowl and blend well. Drizzle the warm scones with the glaze and serve immediately.
