Long-lasting cake perfect for travel. Enhance spiciness with ginger. Top with Cream Cheese Frosting.
Ingredients:
  • 0.5 cup butter
  • 1.5 cups white sugar
  • 1 cup applesauce
  • 2 eggs
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your baking pans by greasing and flouring them. Combine the flour, baking soda, salt, cinnamon, and nutmeg in a sifter and set aside.
  • Cream together the butter and sugar in a large bowl until light and fluffy. Add applesauce and blend well. Then beat in the eggs one at a time. Gently mix in the flour mixture until just incorporated. Fold in the raisins and walnuts. Spread batter into prepared pan.
  • Bake the 8-inch layers in the preheated oven for 25-30 minutes or the 9x13 inch pan for 35-40 minutes until a toothpick comes out clean. Allow to cool in the pans for 5 minutes, then transfer to cooling racks.
