Ingredients:
  • cooking spray
  • 1 cup all-purpose flour
  • 1 cup fine cornmeal
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup sugar
  • 0.75 cup skim milk
  • 2 large eggs
  • 0.25 cup unsweetened applesauce
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and lightly coat an 8x8-inch baking pan with cooking spray.
  • Combine flour, cornmeal, baking soda, baking powder, salt, and sugar in a bowl. In another bowl, whisk together milk, eggs, and applesauce. Gently fold the wet ingredients into the dry mixture until well combined. Transfer batter to the prepared pan and bake.
  • Bake until golden and puffed in the preheated oven for 15 to 20 minutes.
