Indulgent whole wheat apple rum cake with plump raisins and crunchy walnuts.
Ingredients:
  • 0.5 cup golden raisins
  • 0.5 cup raisins
  • 0.33333334326744 cup dark rum
  • 0.5 cup butter, softened
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon cornstarch
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 0.5 cup chopped walnuts
  • 1.5 cups applesauce
Instructions:
  • Combine all the raisins with the rum in a small bowl and allow them to marinate overnight or for at least 4 hours.
  • Heat the oven to 375 degrees F (190 degrees C) while preparing a 9x13-inch baking pan by greasing and flouring it.
  • In a spacious bowl, cream together butter and sugar using an electric mixer until it becomes light and airy. Gradually add the eggs one at a time, then incorporate the applesauce.
  • Combine the flours, cornstarch, baking soda, cinnamon, nutmeg, salt, and cocoa in a separate bowl. Slowly blend the dry mixture into the batter until well combined. Fold in the raisins, any remaining rum, and the walnuts. Transfer the batter into the pan.
  • Bake in a preheated oven for approximately 25 minutes or until a tester inserted in the center of the cake comes out clean. Then, allow the cake to cool on a wire rack.
