Bake ripe apricots with sweet almond paste in a homemade or store-bought crust for a delightful treat.
Ingredients:
  • 10 small fresh apricots, pitted and quartered
  • 0.33333334326744 cup white sugar
  • 1 cup almond meal
  • 0.5 cup confectioners' sugar
  • 1 (9 inch) refrigerated pie crust (such as Pillsbury®)
  • 0.33333334326744 cup apricot jam, melted
Instructions:
  • Preheat the oven to 350°F (175°C) and carefully roll out the pie crust on a baking sheet.
  • Combine quartered apricots with white sugar in one bowl. In a separate bowl, mix almond meal, confectioners' sugar, and egg into a paste. Spread the almond paste onto the center of the pie crust, leaving a 1/2-inch bare edge. Arrange the sugared apricots on top. Fold the bare crust edge over the filling, leaving the center bare. Crimp the edge with a fork around the tart.
  • Simply bake until the crust turns golden brown, approximately 40 minutes. Then, generously brush the hot galette with the melted apricot jam before slicing and serving.
