Exotic saffron and rose water elevate golden basmati rice with apricots and almonds in this perfect party pilaf.
Ingredients:
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 1 small carrot, finely chopped
  • 1 cup basmati rice
  • 1 teaspoon salt
  • 1.875 cups water
  • 0.25 teaspoon saffron threads, crushed
  • 1 tablespoon rose water
  • 0.25 cup dried apricots, diced
  • 0.25 cup slivered almonds
Instructions:
  • In a large saucepan over medium heat, melt butter until fragrant. Sauté onion and carrot until onion turns translucent, approximately 5 minutes. Add basmati rice and salt, stirring continuously until the rice is slightly opaque, around 3 minutes.
  • - Pour water into the pot and stir well. Add saffron threads, rose water, apricots, and almonds. Bring the mixture to a boil. Lower the heat, cover the pot, and let it simmer until the rice has absorbed the liquid, approximately 20 minutes. Remove the pot from the heat and allow the pilaf to stand covered for an additional 10 minutes. Before serving, give it a final stir.
