Apricot-Almond Cobbler

Golden brown almond-topped apricot cobbler, ideal for a cozy Thanksgiving treat.
Ingredients:
  • 3 cans (15 oz each) apricot halves in extra-light syrup, well drained
  • 3/4 cup sugar
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons almond extract
  • 1/2 cup sliced almonds
  • 1 cup plus 3 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup 1% low-fat milk
Instructions:
  • Preheat the oven to 375°F and generously spray a 2-quart casserole dish with cooking spray.
  • Combine apricots, 1/4 cup sugar, half of the melted butter, and almond extract in a casserole dish. Top with 1/4 cup almonds.
  • Combine flour, baking powder, salt, milk, 2 tablespoons almonds, melted butter, and 1/2 cup sugar in a medium bowl. Whisk until the mixture is smooth. Gently pour the topping over the apricot mixture. Sprinkle the remaining 2 tablespoons of almonds evenly on top.
  • Bake for 40 minutes or until the top is beautifully golden brown, then serve warm.
