Indulge in these tasty energy bars featuring Oatmeal Crisp® Raisin cereal, apricots, and almonds – the perfect sweet treat!
Ingredients:
  • 3 cups Oatmeal Crisp® Raisin cereal
  • 2/3 cup finely diced dried apricots
  • 1/2 cup slivered almonds, toasted*
  • 1 tablespoon butter or margarine
  • 2/3 cup light corn syrup
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
Instructions:
  • Prepare an 8-inch square pan by lining the bottom and sides with foil, then spray the foil with cooking spray. In a large bowl, combine the cereal, apricots, and almonds and set aside.
  • In a 4-quart Dutch oven, melt butter with corn syrup, brown sugar, and cinnamon over medium-high heat, stirring constantly until the sugar dissolves and the mixture boils. Let it boil for 2 minutes until slightly thickened, then take it off the heat and mix in the cereal until well coated.
  • Spread the cereal mixture evenly in the pan and press it down firmly using a sheet of waxed paper. Allow it to cool for 30 minutes.
  • Cut the bars into 16 square pieces and store them loosely covered at room temperature for up to 1 week.
