Apricot and chia balls

Sweet and crunchy bliss in every bite - irresistible little balls of joy.
Ingredients:
  • 500g dried apricots
  • 60ml water
  • 20g shredded coconut
  • 85.80 gm peanut butter
  • 60 ml honey
  • 10.00 gm cocoa powder
  • 35g sesame seeds
  • 160g pepitas
  • 35g chia seeds
  • 90g rolled oats
Instructions:
  • Prepare a large tray with non-stick baking paper. In a heatproof bowl, add half of the apricots and cover with hot water. Let it soak for 15 minutes. Drain the apricots and transfer them to a food processor along with coconut, peanut butter, honey, and cocoa powder. Pulse until a thick paste forms. Finely chop the remaining apricots and mix them in a bowl with sesame seeds, pepitas, chia seeds, oats, and the apricot paste. Combine well.
  • Using damp hands, shape heaping tablespoons of the mixture into balls and set on the lined tray. Chill for 1 hour or until solid. Keep in a sealed container in the fridge for up to 1 month.
