Impress guests with quick and easy roast chicken with flavorful apricot and herb stuffing.
Ingredients:
  • 1kg chicken
  • 40.00 ml plain flour
  • 375ml chicken stock
  • 60ml port
Instructions:
  • Roast the chicken as per the packet instructions, then transfer to a serving platter. Cover with foil and let it rest for 5 minutes.
  • After pouring the liquid from the roasting pan into a heatproof jug, set aside. Remove 2 tablespoons of fat from the surface and add it back into the roasting pan. Discard the rest of the fat and keep the pan juices in the jug. Place the roasting pan over medium-high heat, then stir in the flour for 1 minute until it bubbles. Pour in the stock and port, scraping off any bits stuck to the base with a wooden spoon, and cook for 5 minutes until the gravy thickens. Mix in the reserved liquid, season to taste, and strain into a serving jug.
  • Present the chicken alongside the flavorful gravy.
