Apricot & sausage stuffing

Elevate your stuffing game by blending sweet apricots with savory sausage for a delectable homemade twist on a classic dish.
Ingredients:
  • 2 onions
  • 1 bunch of fresh sage (30g)
  • 50 g unsalted butter
  • olive oil
  • 2 clementines
  • 1 whole nutmeg
  • 100 g higher-welfare turkey livers optional
  • 100 g dried apricots
  • 100 ml Vin Santo
  • 200 g stale bread
  • 400 g higher-welfare sausage meat or pork mince
Instructions:
  • Peel and roughly chop the onions, wash the sage leaves, and tear most of them into a large frying pan heated with butter and 1 tablespoon of oil. Add the onions, clementine zest, nutmeg, and black pepper. Cook over medium-low heat for 5 to 10 minutes until onions soften. Trim livers, chop with apricots, then add to the pan. Pour in Vin Santo, cook for 15 minutes until onions are soft. Let cool. Preheat oven to 180°C/350°F/gas 4. Pulse bread to crumbs and mix into the pan with sausage meat. Reserve half for turkey, pack the rest into an oiled baking dish. Flatten and shape into a mound. Top with sage leaves, drizzle with olive oil, bake for 50 minutes until golden and cooked through.
