Apricot chicken sausage rolls recipe

Create delicious Aussie-inspired party bites using a Kmart sausage roll maker for a unique twist on classic favorites.
Ingredients:
  • 500g chicken mince
  • 40g sachet French onion soup mix
  • 82.50 ml panko breadcrumbs
  • 82.50 ml chopped fresh coriander, plus extra sprigs to serve
  • 62.50 ml apricot jam
  • 40.00 ml Moroccan seasoning
  • 2 green onions, chopped
  • 2 garlic cloves, crushed
  • 3 sheets frozen puff pastry, partially thawed
  • 1 egg, lightly beaten
  • 125.00 ml apricot jam
  • 20.00 ml apple cider vinegar
  • 2 tsp Sriracha
  • 1 tsp grated fresh ginger
Instructions:
  • Combine mince, soup mix, breadcrumbs, coriander, jam, seasoning, onion, and garlic in a bowl. Season generously with pepper and mix thoroughly.
  • Cut each pastry sheet in half lengthwise. Brush the edges of one half with beaten egg. Leaving a 1cm border, spread 1/3 cup of mince mixture along one long side of the pastry. Roll the pastry up to seal the filling inside. Brush the top with egg. Repeat the process with the remaining pastry, egg, and mince mixture.
  • Preheat the sausage roll maker.
  • Prepare 2 pastry logs and place them in the sausage roll maker, then close the lid and cook for 12 to 14 minutes until golden and cooked through. Transfer to a plate and repeat the process with the remaining pastry logs.
  • Prepare the Apricot dipping sauce by combining jam, vinegar, Sriracha, and ginger in a small saucepan. Season with salt and pepper, then cook over medium heat until the jam is melted. Bring to a simmer and let it simmer for 3 to 5 minutes until slightly thickened. Remove from heat.
  • Serve the sausage rolls alongside a flavorful dipping sauce and garnish with additional fresh coriander sprigs.
