Whip up a quick and delicious apricot chicken skillet dinner using fresh or dried apricots for a tasty twist on your weeknight chicken dish. Ready in under an hour!
Ingredients:
  • 1 1/2 pounds apricots, pits removed and cut into 3/4 inch pieces
  • 1/4 cup sugar
  • 2 tablespoons cider vinegar
  • 2 pounds boneless, skinless chicken breasts, cut into 1 to 2-inch pieces
  • Salt to taste
  • 1 tablespoon unsalted butter (or substitute with olive oil)
  • 3 tablespoons extra virgin olive oil
  • 1 onion, chopped (about 1 1/2 cups)
  • 2 cups chicken stock
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon cinnamon
  • 2 teaspoons Tabasco or other hot sauce (or more to taste)
  • Black pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)
Instructions:
  • Infuse the apricots: Combine apricots, sugar, and vinegar in a large bowl, allowing the flavors to meld while you brown the chicken.
  • In a large sauté pan over medium-high heat, melt 1 tablespoon of butter with 2 tablespoons of olive oil until hot. Brown the chicken pieces on both sides in batches, sprinkling with salt as it cooks. Transfer the browned chicken pieces to a bowl and set aside.
  • Caramelize the onions: Heat an extra tablespoon of oil in the pan and cook the onion until slightly browned. Use a flat-edged spatula or wooden spoon to scrape up the flavorful browned bits (fond) from the chicken on the pan's bottom. If the pan gets dry, add water, a tablespoon at a time, to deglaze and release the onion.
  • Pour in the flavorful chicken stock after the onions have caramelized slightly, then reduce the heat to medium.
  • Make a smooth apricot puree by blending all the apricots except 1 2/3 cups with their juices. Add this luscious puree to the pan with the stock and onion mixture.
  • Infuse the sauce: Mix in the cinnamon, rosemary, and Tabasco, and let the sauce come to a gentle simmer. Allow it to simmer over low heat for 10 to 20 minutes until slightly thickened. Season with black pepper, taste, and adjust salt and Tabasco to your liking. Enjoy!
  • Just before serving, gently simmer the chicken and reserved apricot pieces in the pan for 5 minutes until the sauce is hot and the chicken is cooked through. Sprinkle with chopped parsley and serve with rice or egg noodles.
