Apricot Chicken Breasts

Try this delicious baked chicken with Whole Grain Total® cereal and apricots for a satisfying dinner option.
Ingredients:
  • 2 boneless skinless chicken breasts (1/2 lb)
  • 3/4 cup Whole Grain Total® cereal, slightly crushed*
  • 1/4 cup chopped dried apricots
  • 1 tablespoon butter or margarine, melted
  • 1/3 cup apricot preserves
  • 1 teaspoon lemon juice
  • Salt and pepper, if desired
Instructions:
  • Preheat the oven to 350°F. Place each chicken breast between sheets of plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until about 1/4 inch thick.
  • Combine cereal, apricots, and butter in a small bowl. Spoon half of the mixture onto the center of each chicken breast. Fold the chicken in half horizontally over the stuffing and secure with toothpicks before placing in an ungreased 9-inch square pan.
  • In a small saucepan, gently warm the preserves and lemon juice on medium-low heat, stirring occasionally, until the preserves are fully melted. Drizzle the mixture over the chicken.
  • Bake for 35 to 40 minutes, or until the chicken's juices run clear when the thickest part is cut (170°F). Season with salt and pepper to taste.
