Tangy apricot-mustard chicken breasts rolled in crunchy cashews for an easy and satisfying baked dish.
Ingredients:
  • 1 (12 ounce) jar apricot preserves
  • 0.25 cup prepared Dijon-style mustard
  • 1 teaspoon curry powder
  • 4 skinless, boneless chicken breast halves
  • 1 cup coarsely chopped cashews
Instructions:
  • Preheat your oven to 375°F (190°C) for perfect baking results.
  • In a large skillet, gently warm up the preserves, mustard, and curry powder over low heat, stirring constantly until the preserves are fully melted and the mixture is smooth.
  • Coat chicken breasts in skillet sauce, then generously coat with cashews and transfer to a lightly greased 9x13 inch baking dish.
  • - Bake the chicken at 375 degrees F (190 degrees C) for 20-30 minutes. Simmer any extra sauce and serve it alongside the chicken.
