Cashew Caramel Corn

Sweet caramel popcorn and cashew crunch.
Ingredients:
  • 5 quarts popped popcorn
  • 2 cups unsalted cashews
  • 2 cups packed brown sugar
  • 0.5 cup light corn syrup
  • 1 cup unsalted butter
  • 0.25 teaspoon cream of tartar
  • 1 teaspoon baking soda
Instructions:
  • Preheat oven to 200°F (95°C).
  • Combine the popcorn and cashews in a spacious roasting pan.
  • In a large saucepan, mix brown sugar, corn syrup, butter, salt, and cream of tartar. Boil while stirring constantly until a candy thermometer reads 260 degrees F (127 degrees C) when inserted into the syrup for 6 to 8 minutes.
  • Take the syrup off the heat and mix in the baking soda. Drizzle this over the popcorn and cashews, then mix until coated.
  • Roast in the preheated oven, tossing every 20 minutes, until the sugar mixture bakes and caramelizes onto the popcorn and cashews, for approximately 1 hour. Transfer the cashew caramel corn onto a baking sheet lined with parchment paper to cool. Optionally shape into balls while still warm.
