Decadent caramel cashew blondies: Moist, gooey bars with a perfect sweet-salty balance.
Ingredients:
  • 2 cups packed brown sugar
  • 3/4 cup butter, softened
  • 2 teaspoons vanilla
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 36 caramels, unwrapped
  • 1/4 cup whipping cream
  • 1 can (8.5 oz) salted cashews, coarsely chopped (1 1/2 cups)
Instructions:
  • Preheat the oven to 350°F. Line a 13x9-inch pan with foil, making sure the foil extends 1 inch over 2 opposite sides of the pan. Lightly spray the foil with cooking spray.
  • In a large bowl, use an electric mixer to cream together the brown sugar and butter until light and fluffy. Add 1 teaspoon of vanilla and the eggs, mix until well combined. Fold in the flour, baking powder, and salt until fully incorporated. Spread the batter in a pan and bake for 25 to 30 minutes until firm.
  • In a 2-quart saucepan, melt caramels with whipping cream over gentle heat, stirring often until smooth. Add the remaining 1 teaspoon vanilla and cashews. Pour evenly over bars. Let cool in the pan for about 3 hours on a rack. Lift out using foil and cut into 6 by 4 rows.
