Indulge in these scrumptious caramel cashew thumbprint cookies for a delightful treat that will wow your guests.
Ingredients:
  • 3/4 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups Gold Medal™ all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup finely chopped cashews
  • 15 milk chocolate squares with caramel filling (from 9.5 oz bag), unwrapped, cut into quarters
Instructions:
  • Preheat oven to 375°F. In a large bowl, cream together butter and powdered sugar using an electric mixer until smooth and creamy. Mix in vanilla and egg until well combined. Slowly add flour, baking powder, and salt until a dough forms. Gently fold in cashews.
  • Roll dough into 1-inch balls and place them 2 inches apart on an ungreased cookie sheet. Gently press your thumb into the center of each cookie to create an indentation without reaching the cookie sheet.
  • Bake for 7 to 9 minutes, or until the edges turn golden brown. If needed, gently press down the center using the end of a wooden spoon handle. Transfer the cookies from the baking sheet to a cooling rack.
  • Place a quarter of chocolate candy in the center of each warm cookie. Allow them to sit for 3 minutes to melt. Use a small knife to gently swirl and fill the thumbprint. For extra flavor, you can sprinkle with more chopped cashews. Allow the cookies to cool completely.
