Caramel Cashew Cheesecake

Impress with this stunning make-ahead holiday dessert ready in just 25 minutes.
Ingredients:
  • 1 1/2 cups finely crushed cinnamon graham cracker crumbs (16 squares)
  • 1/4 cup butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 1/4 cups packed brown sugar
  • 1/4 cup whipping cream
  • 1 cup caramel topping (from 12-oz jar)
  • 4 eggs
  • 1 cup miniature chocolate chips
  • 1 cup whipping cream
  • 1/2 cup cashew halves
Instructions:
  • Preheat oven to 325°F. Wrap a 9-inch springform pan with foil. Combine graham cracker crumbs and melted butter in a small bowl, then press the mixture firmly into the bottom and up the sides of the pan. Bake for 8 to 10 minutes until set, then reduce oven temperature to 300°F.
  • In a large bowl, use an electric mixer to smoothly beat cream cheese. Slowly mix in brown sugar until fluffy. Then, on low speed, blend in 1/4 cup whipping cream, vanilla, and 1/4 cup caramel topping. Add eggs one at a time, mixing well after each. Gently fold in chocolate chips, then pour over crust in pan.
  • Bake for 1 hour and 25 minutes to 1 hour and 35 minutes until the cheesecake is set 2 inches from the edge and the center is slightly jiggly. After baking, turn off the oven and crack the door open at least 4 inches. Allow the cheesecake to sit in the oven for an additional 30 minutes. Remove the cheesecake from the oven and run a knife around the edge of the pan to loosen it. Let it cool for 30 minutes at room temperature, then cover and refrigerate for at least 6 hours or overnight.
  • In a small bowl, use an electric mixer to whip 1 cup of whipping cream until stiff peaks form. Serve each portion by topping with whipped cream, drizzling with the remaining caramel topping, and sprinkling with cashews.
