Air Fryer Apricot-Glazed Chicken Breasts

"Chicken breasts glazed with apricot preserves cook quickly in an air fryer for a delicious meal."
Ingredients:
  • 3 tablespoons apricot preserves
  • 1 teaspoon fresh ginger paste (such as Gourmet Garden™)
  • 0.5 teaspoon minced fresh rosemary
  • 2 (8 ounce) boneless, skinless chicken breasts
  • 1 teaspoon vegetable oil
  • salt and ground black pepper to taste
Instructions:
  • Combine apricot preserves, ginger paste, and rosemary in a small bowl. Microwave for 20 seconds to soften the preserves for easy spreading.
  • Flatten chicken breasts to an even thickness and dry them with a paper towel. Massage with oil and generously season with salt and pepper.
  • Preheat the air fryer to 400 degrees F (200 degrees C), then generously coat the basket with cooking spray before placing the chicken breasts in a single layer.
  • After 4 minutes, gently flip and rotate the chicken breasts. Brush generously with the delicious apricot mixture. Continue air frying until the chicken is cooked through, about 8 to 12 minutes, or until an instant-read thermometer reads at least 165 degrees F (74 degrees C).
  • Place the chicken on a plate, loosely cover with aluminum foil, and allow to rest for 5 minutes. Slice the chicken breasts and serve.
