Spicy chili-rubbed pork chops glazed with sweet apricot, air-fried to perfection.
Ingredients:
  • 4 cups water
  • 2 tablespoons kosher salt
  • 2 tablespoons white sugar
  • 4 (5 ounce) bone-in center loin pork chops, about 3/4-inch thick
  • 1 teaspoon chili powder, or to taste
  • 1 teaspoon onion powder
  • 0.25 teaspoon white pepper
  • 0.5 cup apricot all-fruit spread
  • 3 tablespoons hoisin sauce
  • 1 (1 inch) piece ginger root, peeled and grated
  • 2 cloves minced garlic
  • 1.5 teaspoons Asian chili-garlic sauce
  • 0.5 medium lime, juiced
  • 2 tablespoons finely minced fresh parsley
Instructions:
  • In a bowl, mix water, salt, and sugar until dissolved. Add pork chops, cover, and refrigerate for 2-4 hours.
  • Take out the pork chops from the brine and gently shake off any excess liquid. Discard the rest of the brine. Pat the chops dry using paper towels and arrange them on a plate or a cutting board.
  • Mix chili powder, onion powder, salt, and white pepper in a small bowl. Season 4 chops with half of the rub, coating each side evenly. Let the chops sit at room temperature for 30 minutes. Enjoy!
  • In a microwave-safe bowl, mix apricot all-fruit spread, hoisin sauce, ginger, garlic, chili-garlic sauce, and lime juice for the glaze.
  • Microwave the mixture on high for 3 minutes, remembering to stir halfway through. Gently remove the glaze and set it aside.
  • Preheat the air fryer to 400°F (200°C) as per manufacturer's instructions. Coat both sides of the seasoned and rubbed chops with cooking spray.
  • Arrange the pork chops in a harmonious single layer in the air fryer basket. Air-fry for 8 minutes, gently flipping halfway through for even cooking.
  • Coat the chops with the delicious glaze and air-fry until they are perfectly cooked through in just 2 to 3 minutes. Use a thermometer to confirm they reach 145°F (63°C) in the center.
  • Garnish chops generously with minced parsley and present with the extra glaze for a delicious finish.
