Apricot-Glazed Chicken Breasts with Almond Couscous

Broiled main dish with quick and easy side makes a speedy dinner for four in under 30 minutes!
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 lb)
  • 1/2 teaspoon garlic powder
  • 2 tablespoons apricot preserves
  • 1 cup chicken broth
  • 1 tablespoon butter or margarine
  • 1 cup uncooked couscous
  • 2 tablespoons slivered almonds, toasted if desired
Instructions:
  • Preheat the oven to broil. Grease the broiler pan rack with cooking spray. Place each chicken breast between two sheets of plastic wrap or waxed paper and gently pound with a rolling pin or meat mallet until 1/4 inch thick, starting from the center.
  • Combine garlic powder, pepper, and ground red pepper in a small bowl. Season both sides of the chicken with the mixture and place it on a rack in a pan.
  • Place the chicken 4 to 6 inches below the heat and broil for 5 to 7 minutes, or until the chicken is no longer pink in the center. Brush with half of the apricot preserves and broil for 1 more minute until bubbly. Brush with the remaining preserves before serving.
  • In a 2-quart saucepan, bring broth and butter to a boil. Add couscous and almonds, then remove from heat. Cover and let sit for 5 minutes. Fluff couscous with a fork before serving alongside glazed chicken.
