Elevate your dish with a savory-sweet glaze using soy sauce and apricot jam, or switch it up with a zesty twist using orange juice or marmalade.
Ingredients:
  • 6 skinless, boneless chicken breasts
  • 1 (10.75 ounce) can low-sodium chicken broth
  • 0.75 cup apricot preserves
  • 1 tablespoon light soy sauce
  • 1 tablespoon water
Instructions:
  • Coat a large skillet with nonstick cooking spray and cook chicken until golden brown.
  • Combine chicken broth, jam, and soy sauce in a pot. Simmer gently for 20 minutes or until chicken is fully cooked and no longer pink in the center.
  • Take the chicken out of the skillet. Mix 1 tablespoon of cornstarch with 1 tablespoon of water in the sauce to thicken it (use more of each if desired). Put the chicken back into the skillet and make sure it is well coated with the sauce.
