Quick and easy chicken appetizers made with Bisquick® mix, ready in just 50 minutes.
Ingredients:
  • 1/4 cup butter or margarine, melted
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons Dijon mustard
  • 1 1/2 cups Original Bisquick™ mix
  • 2/3 cup flaked coconut
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup apricot spreadable fruit
  • 2 tablespoons honey
  • 1 tablespoon white vinegar
  • Hot mustard, if desired
Instructions:
  • Preheat the oven to 425°F and generously spread 2 tablespoons of melted butter in a 15x10x1-inch baking pan.
  • Combine sweetened condensed milk with 2 tablespoons of Dijon mustard. In a separate bowl, mix together Bisquick, coconut, salt, and paprika. Dip chicken into the milk mixture, then coat it with the Bisquick mixture. Transfer the coated chicken to a baking pan and drizzle the remaining butter on top. Bake uncovered for 20 minutes.
  • In a small bowl, combine spreadable fruit, honey, 2 tablespoons Dijon mustard, and vinegar. Brush apricot mixture onto the chicken. Bake for an additional 10 to 15 minutes until the chicken is cooked through and the glaze is bubbly. Serve with hot mustard.
