Apricot glazed salmon and rice tray bake recipe

**Quick and delicious: Salmon glazed with apricot jam and microwavable rice.**
Ingredients:
  • 2 x 250g packets microwave brown rice
  • 55g (1/3 cup) chopped diced dried apricots
  • 40g (1 /4 cup) pistachios kernels
  • 80ml (1/3 cup) Vegetable Liquid Stock
  • 2 green shallots
  • 120g (1/3 cup) apricot jam
  • 14.75 gm wholegrain mustard
  • 2 limes
  • 4 (about 800g) skin-on salmon fillets
  • 1 ⁄2 bunch fresh continental parsley
Instructions:
  • Preheat your oven to 190C (170C fan-forced) and line a large baking tray with parchment paper.
  • Fluff up the rice pouches to separate the grains and transfer them to a spacious bowl. Mix in apricots, pistachios, and stock. Slice shallots thinly and incorporate them into the bowl. Season with your favorite spices. Stir thoroughly to blend the flavors. Spread the mixture evenly onto the prepared tray.
  • Combine the jam, mustard, finely grated lime rind, lime juice, and seasonings in a small bowl. Mix well.
  • Arrange the salmon over the fluffy rice bed, generously season, and drizzle with the delectable glaze before baking for 15 minutes or until the salmon reaches perfect doneness.
  • Separate the leafy top from the parsley and then slice the lime into four pieces.
  • Sprinkle the parsley over the rice and salmon, gently stirring it in. Serve with lime slices.
