Baked apricot jam chicken with olives and capers - a gourmet and simple dish perfect for entertaining.
Ingredients:
  • 0.5 cup white wine
  • 0.5 cup apricot jam
  • 0.5 cup packed brown sugar
  • 0.5 cup Spanish olives, drained and sliced
  • 0.33333334326744 cup extra-virgin olive oil
  • 0.33333334326744 cup red wine vinegar
  • 0.33333334326744 cup drained capers
  • 0.33333334326744 bunch fresh cilantro, chopped
  • 5 cloves garlic, minced
  • 1 tablespoon caper brine, or to taste
  • 2 tablespoons extra-virgin olive oil
  • 4 large skinless, boneless chicken breasts
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine white wine, apricot jam, brown sugar, olives, olive oil, red wine vinegar, capers, cilantro, garlic, and caper brine in a large bowl.
  • In a large skillet over medium-high heat, warm 2 tablespoons of oil. Sear chicken breasts until golden brown, approximately 1 1/2 minutes on each side. Be careful not to overcook.
  • Lay the chicken in a baking dish in a single layer and generously coat with the flavorful apricot-olive mixture.
  • Roast in the preheated oven until the chicken is cooked through, 20 to 30 minutes.
